His Answers

As you can imagine, life has been heavy and hectic; however, we are so blessed. "Oh taste and see that the Lord is good! Blessed is the man who takes refuge in Him." We read Psalm 34:8 in our prayer meeting this morning as we rejoiced in the knowledge that God is good. Through times of trials and pain, clinging to the promises of healing in James while thinking about Job and the chance of heartbreak, we are thanking God for waking Rolando. Rolando came out of his coma yesterday morning! He was moved to a better hospital and they were able to diagnose him with pancreatitis and a lung infection for now. Please keep praying for his recovery! Tim Horne, the founder of the school who lived here for 17 years, was able to come down to Ecuador to visit his dear friend and is a great encouragement to all.

In the midst, I'm trying to wrap my head around leaving Ecuador. I feel like I'm wasting any moment not spent with friends. Jessenia and Monica came over last night and taught me how to make Orange Juice Chicken (Pollo al Jugo).


Becky and I bought a weird fruit at the supermarket and Jessenia, master cook, taught us how to make a juice/milkshake out of it. It's called a babaco and was pretty good. We also snacked on achotillo. Horray for exotic fruit!

 

And Becky got impatient for food and fried up some patacones for the appetizer:

Hello Erin! I don't think I've commented here before, but I just wanted to say THANK YOU (err, muchas gracias :)) for your blog posts! I think I originally heard about your blog through your CMML article or some Colombia friends and have been so blessed by the words/picture updates you've shared here. Praying for the work in Ecuador - may the Lord bless you with grace & strength as you continue to serve Him! (p.s.
